Get everything ready
Finely chop the onion and garlic. Deseed and dice both peppers. Drain and rinse the kidney beans, then drain the sweetcorn.
Rinse the basmati rice in a sieve under cold water until the water runs mostly clear.

Put the rice and water in a saucepan. Bring to the boil, cover with a tight-fitting lid, then reduce to the lowest heat and cook until the water is absorbed.

Remove the rice from the heat and leave covered. Fluff with a fork just before serving.

Meanwhile, heat the oil in a large deep frying pan or saucepan over a medium heat. Add the onion and peppers with a pinch of salt, and cook, stirring occasionally, until softened.
