Get everything ready
Finely chop the onion and garlic, halve the cherry tomatoes, and make up the vegetable stock. Measure the rigatoni and oregano so they are ready to add to the pan.

Heat the oil in a large deep frying pan or sauté pan over a medium-high heat. Cook the onion for 3 minutes, then add the chicken mince. Break it up and fry until browned throughout with no pink remaining.
