Get everything ready
Heat the oven to 220°C/200°C fan/gas 7. Put the sweet potato halves cut-side up on a baking tray. Chop the onion, garlic and spinach, and drain and rinse the butter beans.

Rub the sweet potato cut sides with half the oil and roast cut-side down until tender when pierced with a knife.

Heat the remaining oil in a frying pan over a medium-high heat. Cook the onion for 3 minutes, then add the chicken mince and cook, breaking it up, until fully browned and no pink remains. Stir in the garlic, paprika and cumin for 30 seconds.

Add the chopped tomatoes and butter beans. Simmer until thickened, then fold in the spinach to wilt. Season with pepper and lemon juice. Turn the sweet potatoes cut-side up, lightly fluff their centres with a fork, then spoon over the filling.
