Rinse the rice. Chop the chicken, onion, ginger and garlic as specified. Wash the spinach, shake the coconut milk, and cut the lime into wedges.

Put the rinsed rice in a saucepan with plenty of cold water. Bring to the boil, then simmer until tender. Drain well.
