Get everything ready
Rub the flour and cold butter together with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, then add half the beaten egg and the ice-cold water. Bring together gently into a dough without overworking it.
Flatten the pastry into a disc, wrap and refrigerate. Keep the remaining beaten egg for glazing.

Place the sliced apples in a large bowl. Toss with the brown sugar, cinnamon, lemon juice and cornflour until evenly coated.
Heat the oven to 200°C, 180°C fan, gas 6. Lightly butter a 23 cm pie dish. On a lightly floured surface, roll out just over half the pastry and use it to line the dish, leaving a small overhang.
Pile the apple filling into the pastry case and dot with the diced butter. Roll out the remaining pastry, cut into 2 cm strips and weave over the filling to make a lattice. Trim the edges, press to seal and crimp. Brush with the reserved beaten egg and sprinkle with sugar.

Bake on a preheated baking tray until the pastry is deep golden and the apple juices are bubbling through the lattice. If the top browns too quickly, loosely cover with foil for the final 10 minutes.
